This is possible not even one of the best versions of my shrimp and grits


Ingredients:


For the Grits:

- 1 cup stone-ground or 5 minute grits

- 4 cups water (or chicken broth for extra flavor)

- 1 cup shredded cheddar, American and goat cheese

- 2 tablespoons butter

- Salt and pepper to taste


For the Shrimp:

- 1 pound large shrimp, peeled and deveined

- 2 tablespoons olive oil

- 3 cloves garlic, minced

- 1 teaspoon paprika

-2 teaspoons slap ya mama

-1 teaspoon old bay

- 1/2 teaspoon cayenne pepper (optional, for heat)

- 1/2 teaspoon dried thyme

- Salt and pepper to taste

- 1 tablespoon lemon juice

- 2 tablespoons chopped fresh scallions (for garnish)

1 tablespoons flour

1/4 cup butter

1 cup broth

1/4 cup red and green chopped Peppers and onions



Instructions:


1. Prepare the Grits:

- In a large pot, bring the water (or chicken broth) to a boil.

- Stir in the grits, reduce the heat to low, and simmer, stirring frequently, until the grits are thick and tender (about 20-25 minutes).

- Stir in the butter and shredded cheddar, American cheese, and goat cheese until melted and well combined. Season with salt and pepper to taste. Keep warm.


2. Cook the Shrimp:

- In a large skillet, heat the olive oil over medium heat.

- Add the garlic and cook for about 1 minute until fragrant.

-Add butter, flour and broth sprinkle in slap your mama and old bay

- Add the shrimp, paprika, cayenne pepper (if using), thyme, salt, and pepper. Cook, stirring occasionally, until the shrimp are pink and opaque (about 3-4 minutes).

- Stir in the lemon juice and cook for an additional minute.




3. Serve:

- Spoon the cheesy grits onto plates or bowls.

- Top with the sautéed shrimp.

- Garnish with chopped fresh scallions.



*Add cooked andouille sausage or crispy bacon to step 2 with garlic
