Southern Twist Brunch Cheesy Grits with Salmon, Shrimp, and Mushroom Gravy

Today, I’m excited to share a delicious brunch recipe that puts a southern spin on classic flavors: Cheesy Grits with Salmon and Shrimp in Mushroom Gravy, served with an English muffin and a touch of apple jelly. This dish is perfect for a cozy weekend brunch or a special occasion.


Ingredients


For the Cheesy Grits:

- 1 cup stone-ground grits

- 4 cups water (or chicken broth for extra flavor)

- 1 cup shredded sharp cheddar cheese

- 1/2 cup milk

- Salt and pepper to taste


For the Mushroom Gravy:

- 1 cup sliced mushrooms

- 1 tablespoon olive oil

- 1 tablespoon butter

- 1 clove garlic, minced

- 1/2 cup heavy cream

- Salt and pepper to taste


For the Topping:

- 1 cup cooked shrimp (peeled and deveined)

- 1 cup cooked salmon (flaked)

- Fresh parsley, chopped (for garnish)

- English muffins, toasted

- Apple jelly (for serving)


Instructions


1. Prepare the Grits:

- In a saucepan, bring water (or broth) to a boil. Stir in the grits and reduce heat to low. Cook for about 20-25 minutes, stirring occasionally, until thickened.

- Stir in cheese, milk, salt, and pepper. Keep warm.


2. Make the Mushroom Gravy:

- In a skillet, heat olive oil and butter over medium heat. Add sliced mushrooms and sauté until they are golden brown.

- Add garlic and cook for another minute. Then, pour in the heavy cream and simmer until the gravy thickens. Season with salt and pepper.


3. Assemble the Dish:

- Layer the cheesy grits on plates. Top with shrimp and flaked salmon.

- Drizzle with mushroom gravy and garnish with fresh parsley.

- Serve with toasted English muffins and a side of apple jelly.
